What Is Badam Chikki?
Badam chikki — also listed as almond chikki or badam patti — is slivered almonds set through pale golden jaggery. It is the firmest and most aromatic variety we make, and the one people buy when they want something that eats more like a nut bar than a sweet.
Because almonds are graded and priced by size, badam chikki varies a lot between makers; a good slab is thick with slivers rather than dotted with a few.
How Badam Chikki Is Made
The almonds are slivered before roasting so they distribute evenly through the sheet instead of clumping at the base — that even distribution is the whole craft of this variety. They are toasted gently until the aroma lifts, no darker.
The jaggery is cooked to hard-crack, kept a touch lighter than for peanut chikki so the almond aroma is not buried, and the sheet is rolled to a medium thickness and cut warm.
Taste and Texture
Distinctly perfumed — roasted almond carries further than cashew, so the aroma reaches you before the sweetness does. The bite is firm and the finish dry, with a slight tannin edge from the almond skins that keeps it from tasting cloying.
